Do you remember the days when it was frugal to buy a cheap joint and cook it for hours to make it tender?

We used to buy things like Brisket and Mutton and cook them for hours because they were cheap to buy. Now it makes sense to buy a more expensive cut and cook it quickly because of the cost of fuel. What did you used to cook for hours?
